Bison Burger

Serves 8 people


For the burgers:

  • 8 each 8 ounce Bison Durham Patties
  • 2 loaves of sweet French bread (the kind they make at the grocery store)
  • Kosher Salt
  • Black Pepper

For the toppings:

  • 1 can Black Beans
  • 1 can chile verde sauce
  • 1 can diced green chiles
  • 2 ounce red wine vinegar
  • 2 T garlic salt
  • 1 can diced jalapenos
  • 8 ounces Cotija Cheese (in the Mexican section of market)



  1. Heat grill
  2. Season the Bison Burgers with salt and pepper
  3. Hollow out the loves of bread and cut into 8 “buns”
  4. Grill to a perfect medium rare
  5. Toasted buns
  6. Place the patty on the buns


  1. Drain beans and wash under cold water
  2. Add the verde sauce, chiles and jalapenos and red wine vinegar
  3. Bring to a simmer.
  4. Spoon over the burgers and crumble cheese on top
