Durham Ranch Wild Boar Loco Moco


  • 2 cups of cooked rice
  • 1 pound of ground wild boar
  • 2 strips of bacon, chopped
  • 1 egg, beaten
  • 1/4 cup of pork panko
  • 1 tsp of Smoky Lonestar Spice
  • 1 tsp of soy sauce
  • 1 tsp mustard powder
  • Salt & pepper to taste
  • 4 free range eggs
  • 3 tbsp of butter
  • 1 1/2 cups of beef broth
  • 1 tbsp worchestershire sauce
  • Green onion, sliced


  • In a bowl, mix the pig, bacon, egg, pork panko, soy sauce, mustard, Smoky Lonestar spice, salt, and pepper. Shape into 4 round patties.
  • In a preheated skillet, fry the patties. Fry the eggs, sunny-side-up and set aside.
  • Melt the butter in the skillet on medium-high heat. Stir in the flour and whisk until smooth. Lower the heat to medium and slowly add the beef broth. Cook for 5 minutes at a low boil, continually whisking to avoid lumps. Stir in the worcestershire sauce, and add salt and pepper to taste.
  • Top the rice with the wild boar patties, ladle the gravy over then top with fried eggs and garnish with green onion.
